Cherry Cobbler

Cherry Filling

2 lbs frozen red tart whole pitted cherries, thawed
1/3 cup white granulated sugar
1/3 cup light brown sugar
2 tbsp cornstarch
2 tbsp Lindera Farms Cherry Blossom Vinegar
1/8 tsp salt

  1. In a large bowl, gently stir together the cherries, white and brown sugar, vinegar, and salt.
  2. Sprinkle in the cornstarch and let the mixture sit for about 5 to 10 minutes, then gently stir again until combined.

 

Cobbler Batter

1 cup all-purpose flour
1 cup white granulated sugar
1 cup milk
2 teaspoons baking powder
1/8 teaspoon salt
1/3 cup unsalted butter, melted
1 1/2 tbsp light brown sugar

  1. Preheat oven to 350 F.
  2. In a medium bowl, mix the flour, sugar, milk, baking powder and salt.
  3. Pour the melted butter into a 9” x 9” baking dish, then pour the flour mixture over butter.
  4. Add the cherry mix, but don’t stir it into the batter.
  5. Sprinkle the remaining light brown sugar over top.
  6. Bake the cobbler for about 50 - 60 minutes, or until golden brown.
  7. Best served warm with vanilla ice cream.
